By joining this committed community, we are affirming our desire to promote values such as proximity, authenticity and respect for our territory. This approach is part of our commitment to promoting local and responsible initiatives that bring our beautiful region to life.

For L’Olivier, joining Teritoria represents the culmination of a philosophy that we have cultivated since the beginning: to create a gastronomic experience that transcends simple tasting to become a true tribute to our terroir and to those who shape it day after day.

This alliance will enable us to strengthen our links with a network of exceptional producers, to exchange virtuous practices with other establishments sharing our values, and to participate collectively in the definition of responsible, forward-looking gastronomy.

At the heart of the Olivier garden, our kitchen garden is an essential part of our cuisine.

True to our commitment to ethical and responsible gastronomy, we have chosen to produce 80% of our aromatic plants on site. Cosmos, oxalis, tagetes, lemon balm, quater…

These carefully selected varieties give our dishes a unique identity, a house signature that enhances each creation. More than just a growing area, it’s a real source of inspiration, allowing us to work as closely as possible with the product and bring out all its intensity.

At the heart of L’Olivier’s cuisine, passing on knowledge is an essential value. Chef Christophe Pulizzi has chosen to train his young, talented brigade himself. For him, excellence in the kitchen is not measured by age or seniority, but by vision, determination and the ability to trust others. Having solid shoulders, knowing where you’re going and persevering are the keys to progressing in this demanding profession.

Working alongside him means immersing yourself in a kitchen where every detail counts. He attaches fundamental importance to knowledge of taste, the ability to understand and sublimate each ingredient. Precision, perseverance and exacting standards are the key words that he instils in his apprentices, with rigour and kindness. More than just know-how, he passes on a genuine philosophy: sincere cuisine rooted in emotion and respect for the product.


But his commitment extends beyond the walls of the restaurant. He shares his experience with the next generation by working with hotel schools such as those in Sisteron and Bonneveine.
